ZUCCStuffed Tofu Bolognese and Cashew Cheese Zucchini

1 zucchini sliced horizontal scoop out meat. Make marinara sauce in Vitamix. Now add tofu crumbles. Top off with vegan shredded cheese. Use Nutritional yeast in place of parmesan cheese. The yeast is packed with Vitamin B12, which we find typically in animal protein. The yeast is great for Vegans taste great on popcorn too. Bake at 325 for 20 minutes.

1,2,3 Marinara: Using a Vitamix add fresh tomatoes, 1-jar roasted peppers, sun-dried tomatoes, olive oil, and 1 garlic clove. Lastly, add tofu making sure not to over blend. The consistency should resemble chopped meat.
